A good diner pancake is harder to find than it should be. Most places use a packaged mix and a hot griddle. Ours come from a buttermilk batter we mix every morning, cooked on a well-seasoned flat-top, served with butter and your choice of syrup. Real maple is on request. Short stack or tall, blueberry when in season, Belgian waffles if you want crispy edges.
The flat-top runs hot and stays seasoned. Butter goes down, batter goes on, edges set, the pancake gets flipped exactly once. The crust comes out golden, the middle stays soft. You can see them being made if you sit at the counter — the kitchen's right there.
Every table has standard syrup. If you want real grade-A maple, just ask your server — it's warmed and brought to the table. Butter is real butter, served at temperature. No "spread" or "topping" oil-based substitutes.
