Most diners make French toast from a sandwich loaf. We make ours from our own banana bread — baked overnight, sliced thick, soaked in an egg-and-cream custard, griddled on the flat-top, served with real maple syrup and crispy bacon. It's a Capri original. You can't get this anywhere else in Meridian. $15.95
The trick is the bread. Banana bread is denser than sandwich bread, so it holds up to the custard soak without going soggy. The natural banana sugars caramelize on the flat-top into a crust that's almost like crème brûlée. The inside stays soft and warm. The maple sinks in. The bacon gives the salt-fat-sweet contrast that makes the plate work.
We started baking the banana bread overnight years ago because we needed it for the loaf-and-coffee plate. Then someone in the kitchen tried it dipped in custard, and that was the end of the regular French toast on the special board. It's been on the menu ever since.
If banana bread isn't your thing, we also serve a classic Texas-toast French toast — same custard, same flat-top, classic bread. Same maple, same bacon. Both versions are on the breakfast menu.
