It started in 1943 โ€”

A diner born during wartime.

The Capri opened in 1943 โ€” World War II was on, gas was rationed, and Boise was a different kind of town. But people still needed breakfast, and they still needed somewhere to sit down for an hour and feel taken care of. That hasn't changed.

The downtown spot on Fairview is the original โ€” same building, same booths in many cases, the same red counter stools that have held up generations of farmers, families, and the kind of regulars who don't even need to order.

Coming to Meridian โ€”

Same diner, new corner.

The Meridian location opened to bring the same diner โ€” same recipes, same family โ€” to families on this side of Eagle Road. We're at the corner of McMillan and Linder. Same flat-top, same biscuit dough, same coffee pot.

Things we've never changed: real eggs cracked to order. Hash browns crisped on a flat-top. Sausage gravy made fresh from scratch every morning. Coffee that's actually hot. Cinnamon rolls baked daily, not shipped frozen.

Things we have changed: bigger menu, more vegetarian options, milkshakes available before noon. We adapt where it makes sense and we hold the line where it matters.

A short timeline โ€”

Eight decades, one griddle.

1943

The Capri opens in Boise.

The original location at 2520 W Fairview Avenue starts serving breakfast and lunch to a wartime Boise. The biscuits and gravy recipe is set on day one.

1950s

The diner takes its shape.

Counter stools, booths, jukebox, neon. The look people recognize today โ€” the look the Capri has held onto for over 70 years.

2000s

The current ownership begins.

Family takes over the daily operation. The kitchen never closes. Long-time staff stay long-time staff. Regulars notice nothing has changed in the food.

2020

Capri Meridian opens.

1407 W McMillan Road. Same recipes, same family, same standards. Bringing the Capri's breakfast to families on the west side of the Treasure Valley.

Today

Two locations. One kitchen philosophy.

Real food, fair prices, you leave fuller than you came. We're not trying to be anywhere else.

Eggs cracked to order from real shells. House sausage gravy. Hand-breaded chicken fried steak. Hash browns shredded fresh. Cinnamon rolls baked every morning before sunrise.

"Bigger servings that are large enough for two people," as one regular put it. We don't believe in tiny plates. If you're paying for breakfast, you should leave fed.
