Most diners won't bother with Benedicts because the hollandaise breaks if you don't make it right. We make ours fresh every morning — egg yolks, real butter, lemon, salt, the works — and we poach the eggs to order. The classic is Canadian bacon. The rotating specialty changes by what the kitchen has fresh that week.
Hollandaise is the test of a kitchen. Get it wrong and it breaks, separates, or tastes like nothing. Get it right and it's the best thing on the plate. We make ours every morning, fresh: clarified butter, egg yolks, lemon juice, salt, a little white pepper. Whisked over a low double boiler until it's silky. Held warm just long enough to serve. Not from a packet, not from a powder, not pre-made the night before.
The eggs hit the water the moment your ticket comes up. Tell your server how you like them — soft runny yolks, medium, firm. The whites set in 3 minutes, the yolks stay liquid in the middle. We use a slotted spoon, drain, and plate them on top of the muffin and meat.
