Why our biscuits are different

Most diner biscuits are pulled out of a freezer and baked at the start of the shift. Ours aren't. The dough gets mixed the night before, covered, and let to rest in the cooler — that's what gives it the layered texture you can pull apart in sheets. From 6am to noon, we bake a fresh tray every 45 minutes. If you sit down at 9am, you're getting a biscuit that came out of the oven inside the last 45 minutes. That's a kitchen rule, not a marketing line.

And the gravy

Real pork sausage cooked off every morning. The fond stays in the pan, flour goes in to make a roux, then cream and milk and a heavy hand of black pepper. It simmers for 30+ minutes before service starts. No instant gravy mix, no thickener from a jar. Just sausage, fat, flour, cream, pepper, time.

Half orders, splits, and add-ons

A full Loaded is two biscuits, which is a lot of plate. If you want lighter, ask for a half order — one biscuit, same gravy and toppings, smaller portion. Many regulars split the full plate two ways and add eggs and toast for the second person. The kitchen is fine either way.
